Stuffed with Caramel….nuff said?
Banana bread is a miraculous thing in its ability to be treated as a breakfast, snack or dessert. This banana bread is decadent enough to truly hold the throne of dessert, but I wont judge you if you eat it for breakfast…all at once, in one sitting. 😉
Preheat Oven to 350 degrees.
Butter and flour a loaf pan.
Add 4 mashed bananas to a large mixing bowl then combine sugar, eggs & yolks, vanilla, melted butter and buttermilk.
TIP: No buttermilk? Simply add a tablespoon of vinegar to regular milk, stir, and let sit for several minutes. (See Photo as milk begins to turn)
Add flour, baking soda & salt to mixing bowl slowly, mixing as you go.
Transfer half of the batter to baking dish.
Add 1/2 stick of butter and 1/2 cup brown sugar to a saucepan on medium heat.
Stir until bubbly and reduce heat to low.
Continue to stir until butter and brown sugar are a caramel consistency.
Using a spoon, drop half of the caramel onto batter and spread.
Add remaining batter on top and bake for about 1 hour.
Remove from oven and cool. Drizzle with remaining caramel and flaky sea salt.
