Chex mix is such a simple snack, but it has a cult like following. I feel like chex has been concocted in every way possible from savory to sweet and let me tell you that I am here for all of it!
This particular chex mix is famous in my house. If I am making it I have to make large (massive) amounts because it will be eviscerated within a day. With tomato paste and pizza seasonings it really does taste the like crispiest pizza you have ever had.
While most chex mix recipes start with the cereal in its pure form I actually use chex mix bold. There are a lot of liquids in this mix and I find the bold mix holds up better when baking. Plus, its a short cut and who doesn’t love that?
This recipe makes one cookie sheet worth of mix. The recipe can be doubled quite easily.
In a large bowl add one bag of family size bold chex mix and one bag of 16 oz pretzel sticks.
6 tablespoons of melted butter.
2 tablespoons of tomato paste
2 tablespoons of Worcestershire sauce ( did you just try to say this in your head?)
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon oregano
1 teaspoon basil
The smell at this point may cause you to just dig into the bowl.
Next, cut up one 16 ounce bag of pepperoni. Go full fat here, turkey pepperoni wont cut it.
Put the pepperoni in the microwave for 2 to 3 minutes until crispy and set aside.
Place your chex mixture on a cookie sheet with parchment paper and bake in the oven at 250 degrees for 1 hour, stirring every 10 minutes.
Remove from oven and place your cooked pepperoni on top then continue to bake for 5 minutes.
