Oatmeal Cookie Caramel Apple Ice Cream Pie


A soft but thick chewy oatmeal cookie crust covered with vanilla bean ice cream, soft spiced apples, and crumble topping and then drizzled with caramel sauce.



Oatmeal Cookie Crust Ingredients

  1. 1 cup room temp salted butter 
  2. 1/2 cup white sugar
  3. 1.5 cup packed brown sugar
  4. 2 eggs 
  5. 1 tsp vanilla extract
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon salt
  9. 1 teaspoon cinnamon 
  10. 1/2 teaspoon pumpkin pie spice
  11. 3 cups quick cooking oats


  1. Vanilla Bean Ice Cream

Apple Topping

  1. 6 peeled and cored red and green apples
  2. 1/2 stick  salted butter
  3. 1 teaspoon nutmeg
  4. 1 teaspoon cinnamon

Crumble Topping

  1. 1/2 cup brown sugar
  2. 1/2 stick melted unsalted butter
  3. 1 teaspoon cinnamon

Caramel Sauce

  1.  1/2 stick salted butter
  2.  1 cup brown sugar
  3. 1/4 cup heavy whipping cream


Cookie Crust

  1. Preheat oven to 375
  2. Line baking sheet with parchment paper.  These cookies do not do well with a greased baking pan.
  3. In a stand mixer, cream together butter & sugars until fully mixed.
  4. Beat in eggs, one at a time.
  5. Add in vanilla.
  6. In a separate bowl combine flour, baking soda, salt, and spices.
  7. Add dry mix into wet mix one cup at a time until fully combined. 
  8. Add oats in last, one cup at a time until fully combined.

Press cookie mixture into a prepared 9 inch pie pan.    Bake for 10 minutes.  Remove from oven and allow to cool for 30 minutes.   When fully cooled place the crust in the freezer for one hour.


Remove crust from freezer and cover middle in soft vanilla bean ice cream.  Cover in plastic wrap and place it back in freezer for a minimum of one hour.  4 hours to overnight is best.

Apple Filling

Core, peel and chop 6 red and green apples

Add to pan on medium heat with butter and fry for about 5 minutes, then add your spices and fry for 5 more minutes or until the apples start to soften.

Crumble Topping

Combine brown sugar, melted butter, and cinnamon in a bowl.

Place mixture on a WELL GREASED sheet pan and bake at 375 for 10 minutes.

Caramel Sauce

Combine butter and brown sugar in a non-stick pan at medium heat. Mixing constantly, allow the caramel to meld. This takes about 10 minutes.  When your sauce starts to bubble, remove from heat and add in heavy whipping cream.  Stir until you have a golden tan caramel sauce.

Add  room temp fried apples, warm caramel sauce and crumble to your topping when ready to serve.    Enjoy!



This dessert is best compiled right when you plan to serve it.   Apples should be room temp so they don’t overly melt your ice cream.
