Oh my dear friends, when I tell you this is in the top 10 of all desserts that I have ever made, I am telling you that this is in the top 10 of all desserts I HAVE EVER MADE! I am not even sure where this deliciousness came from. It was a strange Frankenstein dessert that I just continued to build on.
Let me start at the beginning, if there really is one. My husband loves apple pie ala mode. He also loves oatmeal cookies sans the raisins. One day he asked for apple pie and I was all like ” no one wants to read about apple pie!”
So, this Oatmeal cookie caramel apple ice cream pie was born! A soft but thick chewy oatmeal cookie crust is the base for this delicious pie. You could cheat here and buy store ready batter or make your own. I topped it with vanilla bean ice cream and fried apples and then drizzled the whole thing with scratch made caramel sauce.
Was I done? Nope. I topped this insane pie off with crumble topping, because, you know, it wasn’t decadent enough.
Frankenstein creation? Maybe! Insanely delicous and totally different from your standard apple pie? Absolutely.
I started off by making my standard oatmeal cookie recipe which you can find here.
Once the crust has been baked I place it in the freezer for an hour.
Then I added 3 scoops of soft vanilla bean ice cream to the crust.
I smoothed the ice cream over the crust and placed back in the freezer while I prepped the remaining ingredients. The longer you allow the ice cream to refreeze the better the outcome. Just be sure to cover with plastic wrap so your ice cream doesn’t pick up the “flavors” of your freezer.
Next up I cored and peeled 6 green and red apples. There is no specific apple requirement here. Just be sure to use a mix of both colors.
In a non stick pan ( cast iron is best) add a half stick of butter and allow to melt over medium heat. Once the butter has melted and started to bubble, toss your apples in. Well, don’t “toss” them. That could lead to butter splatter. 🙂
Move those apples around for about 5 minutes and then add in your spices. These apples will cook for about 10 minutes total. I think its important to share here that the amazon delivery man dropped off a package at this point and he told me my house smelled like his maw maw’s. I take that as a a serious compliment.
Set your fried apples aside in a bowl to allow all of those spices and butter to party together. Then get started on your crumble topping. Add oats, brown sugar and melted butter to a bowl and mix. Do your best not to eat this right off the spoon.
Add the crumble to a greased sheet pan and bake at 375 degrees for about 10 minutes.
We have reached the last step!!! Caramel sauce……
In a medium saucepan add your butter and brown sugar and allow to melt together, mixing constantly. When your caramel gets all brown and bubbly remove from the heat and add in heavy whipping cream. Look at you, you just made caramel.
Pull that crumble out of the oven and allow it to cool.
This dessert should be assembled right at serving time. Pour the room temp apples over that ice cream, drizzle it with caramel, top with crumble and watch your families eyes widen.
