This cheesecake recipe brings me right back to childhood memories of waiting for the ice cream truck…..
When it’s hot out a No Bake dessert is always my go-to. This Creamsicle Cheesecake always proves to be a winner. It has a great cheesecake taste without the heaviness of a true slice of cheesecake. Best served right from the fridge, this cake is light and fluffy with a true Creamsicle flavor.
First, crush up one 11 Ounce box of Vanilla Wafers with 6 tablespoons of butter and a 1/2 cup of granulated sugar.
Press into a greased 9 inch springform pan and freeze for 10 minutes.
Next add 16 ounces of cream cheese to your mixing bowl (two packages) and mix until smooth.
Add 1/2 cup granulated sugar to cream cheese and mix for 3 minutes.
In a separate bowl, combine orange jello with one cup boiling water and set aside. ( Do not let it set up, you will want a liquid consistency.)
In a chilled mixing bowl, whip heavy cream, powdered sugar and vanilla until stiff peaks form.
Add 1/2 the cheesecake mixture and half the whipped cream mixture to the jello bowl.
Mix for 3 minutes.
Spread remaining cream cheese mixture onto frozen crust and chill for 20 minutes in freezer.
Remove cheesecake from freezer and spread jello layer on top.
Then add remaining whipped cream and swirl.
Allow cake to chill in fridge for a minimum of 6 hours. Chilling overnight is best.
Serve right from the fridge & enjoy!Print
