I come from an Irish household. I mean IRISH. We flew the Irish Flag next to the American Flag. We played the music, and most importantly, we ATE THE FOOD!
This Mint Brownie Cheesecake Parfait is made two ways. Boozy ( My personal favorite) with a nice helping of Crème De Menthe and Kid Friendly with mint extract. Its the perfect St. Paddy’s Day Dessert!
While these desserts might not actually be something you would be served in Ireland, they are green and minty, and I think that counts!
I started by making a fudgey brownie mix. Find my recipe here!
I cook the brownies, and allow them to cool completely.
While my brownies are sitting, starting at me, asking to be eaten, I prepare the minty cheesecake filling.
If you are making these boozy, you would add the Crème De Menthe now. I typically add in just a little green food coloring and then separate my filling into two parts, drunk and not drunk 😉
Once my filling in complete I place it in the fridge to chill and I start to crumble ( and eat) my brownies.
Now the fun part. I begin to prepare the layers for their final destination.
I start with a prepared graham cracker crust and layer in opposite piles of minty cheesecake filling and brownie crumbs. I top this trifle of heaven with whipped cream and chopped up Andes Mints.
This is a really light dessert that still makes you feel like you had dessert. The mint is refreshing and the brownie is decadent. Make it for St. Paddy’s Day or just a Tuesday. It’s a yummy dessert that its gorgeous to look at!
