It was 80 degrees in PA yesterday! I am so ready for the warm weather! To me, summer means smores! In all the ways I can get them! These marshmallow stuffed smores give you all the deliciousness of your campfire favorite without the mess!
I started off by making a dark chocolate cake. You can skip this step and use a box mix if you really want to make this easy. I love the dark chocolate cake mix by ghiradelli.
Once the cupcakes are in the oven I started making a marshmallow buttercream. Just stop and live in that for a second. Marshmallow buttercream!!! Yum!
When the cupcakes are cooled I took a teaspoon and cut out a hole in the top of the cake. I used store bought marshmallow fluff and filled the hole in each cake. I then went and made a fluffernutter sandwich, but that is a conversation for another time.
I iced the newly stuffed cupcakes in buttercream and then rolled in graham cracker crumbs. For an extra festive Instagram worthy cupcake, top with a toasted marshmallow and a piece of chocolate. Gorgeous!Print
