There is something about waking up on a Sunday morning, moving slowly, sipping on coffee, and really savoring the day.
Sunday mornings mean big breakfasts at my house. This loaded breakfast strata is one of my favorites. I can make it the night before and pop it in the oven on Sunday morning with little effort. It smells divine and feeds a crowd with plenty of leftovers. It also freezes well and is a great casserole to take to a friend. All around a great way to start your weekend mornings.
I find that day old stale bread works best for this strata. I use a crusty french bread that I chop up and saute in butter.
The next part is really up to you! For this strata I fried up some ham that was leftover from Christmas, but it would work great with sausage, or crumbled bacon. It is also delicious as a vegetarian meal with just roasted veggies! I also threw in some spinach, which would totally make it a healthy dish right? Right.
In another bowl, mix 8 eggs seasonings and milk and mix.
Pour egg mixture over strata and cover with cheddar cheese.
Pop in the oven and go enjoy your morning!Print
