I love key lime pie. I travel to Florida, or let’s be honest, I travel to Disney World (boymom) yearly and I always try to make it a point to get real key lime pie while I am there. There is just nothing like it. The tartness of the key limes paired with the soft sweet meringue is just, heavenly.
This key lime pie in a mason jar is my take on the famous dessert. Its a perfect portion size and making it in this jar just ups its cuteness factor. This would be a great dessert to serve at a baby or bridal shower. It is as photo worthy as it is tasty.
Best of all, its simple to make and assemble!
These key lime “pies” start with quick setting vanilla pudding mixed with key lime juice and lime extract.
If you are unable to find fresh key limes at your local grocery store, they often have bottled options available. I would not use regular limes in this recipe, they just don’t have the tartness factor that makes key lime pie, key lime pie.
Follow the box instructions to mix up the pudding and add in 1 tablespoon key lime juice and 1 teaspoon lime extract. Set the pudding aside and let it set up.

Next, mix your graham cracker crumbs with 4 tablespoons melted butter. Start to assemble the key lime mason jars by adding layers of graham cracker mix and key lime pudding.
Finally, add one cup of heavy cream to a mixer and whip on high until peaks form. Top the mason jars with whipped cream and sliced limes and stare at your gorgeous work!Print
