There is a time for a slow cooked chicken pot pie. A homemade crust rolled out, veggies lovingly chopped and a slow cooked roux. Its a great way to spend a weekend morning.
But, this is not that time. I like to call these recipes my “weeknight chicken pot pies”. I have a quick recipe and a lightning fast recipe. One is half homemade and one is mostly putting premade ingredients together. They are both easy and they both come out delicious. Chicken pot pies freeze well, they feed a crowd, and my kids love them.
